chicken/vegetable soup homemade

Ingredients
1 cup celery diced1/2 cup onions chopped1/2 cup carrots chopped3 cloves garic minced1/2 sweet red pepper2 Roma tomatoes chopped2 cups medium sweet potatoes cubed, small skinless chicken 5 ozs cubed1 T. tarragon1 T thyme1 tsp fresh ground black pepper6 c Swanson, low sodium chicken broth1 1/2 T olive oil
Directions
Serving size is about 1.5 cups per serving
put oil in soup pot. Add celery carrots, onions, peppers and garlic and simmer until tender, cube chicken,stir untill lightly browned, add tomatoes and sweet potatoes
stir for 1-2 minutes. , Add Chicken broth.
Add spices about 15 minutes before serving and ajust to personal taste.
I usually simmer this soup for a 1 hour until sweet potatoes are done.

This is really a comfort food.
