African Sweet Potato and Peanut Stew

Ingredients
2 medium yellow onions, chopped3 garlic cloves, minced2 red bell peppers, seeded/choped1-2 TBSP light brown sugar1 tsp fresh minced ginger1 tsp ground cumin1-2 tsp ground cinnamon (more if you like)1/2 tsp cayenne pepper1/2 to 2/3 cup natural peanut butter2-3 medium sweet potatoes, diced1 can red kidney beans1 can (15 ou) diced tomatoes4 cups low sodium vegetable stocksalt to tastebook lists at 491 calories per serving (6-10 listed); 19 g fat, 22 g protein, 60 g carb, 13 g fiber; 0 cholesterol and 1071 mg sodium
Directions
sautee garlic/onions until softened
add peper and cook til softened
stir in brown sugar, ginger, cumin, cinnamon, pepper
stir in peanut butter
add potatoes, kidney beans (rinsed) and tomatoes - stir to coat
add vegetable stock and bring to boil
reduce heat and simmer until sweet potatoes are soft (about 30 min)
can top with chopped cilantro and/or peanuts if desired

    I recently made this and its WONDERFUL! It sure made way more than the 6 servings shown... probably nearly 16 cups of stew when I was done. Maybe my sweet potatos are bigger. Yum yum yum - 10/21/11
