Ingredients
1 cup flour2 tbsp sugar1 tbsp cinnamon2 tbsp extra light olive oil1 tsp vanilla extract1 egg1 tbsp baking powder1/2 tsp salt
Directions
combine all ingredients into bowl, mix.
pour onto low-to-medium heat skillet or griddle.

* can add fresh fruit such as blueberries, strawberries, etc.

makes 8 large pancakes

    The problem I found with making this recipe is that there were no instructions on the amount of water or milk that would be needed to make the pancakes. If you go by just what is posted the ingredients stay dry. I added water until it was my desired consistancy. Ok recipe, but cinnamin was too much. - 1/14/11

    Very bland. Followed the recipe, and it made a ball of dough. No mention of adding liquid, and I found it needed to between ¾ - 1 cup of milk. Cinnamon was overpowering. If I try this again, I would omit the cinnamon and add a pinch of salt and a teaspoon of lemon juice to brighten the flavor. - 4/26/19
