Spinach Cheese Pie

Ingredients
5 oz - Fresh Spinach15 oz Ricotta Cheese ( I used whole milk)1/4 cup Parmesan Cheese1/4 cup Chopped Red Pepper3 Eggs, beaten
Directions
Beat eggs. Add the rest of the ingredients and mix well. Turn into a pie plate coated with cooking spray, spreading a little thinner in the middle. Bake at 350 for 35 - 45 minutes.

Makes 8 servings

(Original recipe called for 10 oz of spinach, 24 oz of ricotta cheese, and 1/2 cup parmesan cheese. Measurements for the eggs and red pepper were the same.)
