Stuffed Mushroom Appetizer -version 1-

10 medium to large sized white mushrooms1 avocado1/2 a fresh carrot (not the fake ones) -graded-1 cup minced spinach1 tbs minced onion1 colve minced and crushed garlicsalt and pepper to taste.
This makes 10 mushrooms, which is a good amount as an appetizer for 3 people.
Preheat oven for 350
1. gently remove the stems from the mushrooms, just pull.
2. mince the stems, onion, carrot, and spinach.
3. use a dash of water to "fry" the veggies until the spinach is soft and small. then add the garlic for 2min
4. slice the avocado and put its contents (minus the pit) into a medium bowl. Mash avocado and mix in the veggies.
5. add a spoonful of avocado vegetable mix into the cup of each mushroom and top with graded mozzarella (skim).
6 Place mushrooms on cookie sheet and bake for 20min.
cheese should get melted over each mushroom and the mushrooms will brown and soften.
Let cool and enjoy.. good with rice or as an appetizer. Feel free to add a little spice or a chile to the avocado mix if you chose.
