Pan Roasted Yukon Gold Potatoes

1 1/2 lbs baby Yukon gold potatoes1/2 tsp kosher salt1/2 tsp fresh cracked black pepper1 1/2 cups unsalted chicken stock2 Tbsp Smart balance buttery spread2 Tbsp fresh chopped parsley
Place poatatoes in a deep skillet and season with salt and pepper. Cover potatoes 1/2 way with chicken stock. Add buttery spread and cover with lid. Bring to a boil then lower heat and simmer until almost tender (about 6 - 8 min depending on size of potatoes). Remove lid and continue to cook, allowing stock to evaporate (about another 5 minutes). Pop each potatoe using a laddle or the back of a large spoon (you should create a crack, but not smash!!!) Allow the potatoes to brown (about 3 minutes on each side). Remove to a serving platter and garnish with parsley.
