Kim Japanese Steakhouse Fried Rice

1 cup white rice2 cups water1 Tbsp. roasted minced garlic2 eggs1/2 cup chopped onion1/2 cup chopped carrots2 Tbsp butter2 Tbsp peanut oil4 Tbsp. Low sodium soy sauce1 tsp freshly ground black peppr (or to taste)2 tsp salt (or to taste)
In saucepan bring 2 cups water to boiling. Add 1 cup rice and 1 Tblsp. garlic. cover and cook till all water is absorbed and rice is soft. I do this hours in advance so that I can cool the rice in the fridge. Chop onions and carrots and set aside in bowl. heat up your griddle to a high heat (around 400) in one corner cook your two eggs in a bit of a scramble. put your 2 Tbsp. peanut oil in center of griddle and cook the onions and carrots when almost soft stir in the eggs. Next add your rice and toss to mix. Add the 2 tblps of butter and the soy sauce and toss once again also add the salt and pepper. Serve right away! This makes 8 1/2 cup servings.
