Mini Egg & Spinach Souffle

Ingredients
3 eggs4 egg whites10 oz chopped frozen spinach1 oz reduced fat feta cheese3 grape tomatoes chopped
Directions
Preheat oven to 350
Spray muffin tin with cooking spray
Beat eggs together
Pour 1/4 c. egg mix into 8 muffin tins
add spinach, tomato cheese to each tin
salt & pepper to taste
Bake for approx. 20 min
