Paleo Mayonnaise

Ingredients
2 eggs2 1/2 cups light tasting olive oil4 tbs lemon juice1 tsp salt1 tsp ground dry mustard
Directions
In blender mix egg, lemon juice, 1/2C OO, salt, mustard 20-30 sec.
Then gradually add remaining 2C OO while blending.

Makes about 3 cups, serving size 1 tbs.

Best if all ingredients are room temperature.

    I found even light olive oil resulted in an odd flavor. I think Mary Enig and Sally Fallon's oil blend worked better for this. Just combine equal parts gently melted coconut oil, expeller expressed extra virgin olive oil and expeller expressed sesame oil. - 3/21/11
