German Style Green Bean Soup

1 Bunch Soup Greens (1 Leek, 1 small Rutabaga, 2 stalks celery, 2 carrots, 1 onion)6 cups water8 peppercornsSalt, to taste1 lb. Beef Stew Meat1.25 lb. Green Beans, fresh1 T Savory, ground2 oz. Smoked Ham1 T butter1 T flourParsley for garnish
Wash the soup greens and peel one onion. Add the water and meat into a large pot and bring to a boil. At the soup greens and onion, pepper corns and salt. Simmer on low heat for 1 hour. In the meantime cleans, snap and cut the beans into about 2 inch long pieces. Mix the beans and savory in a bowl. Pour the broth over the beans through a sieve, return to pot and boil over medium heat of 10 minutes. Separate the meat from the soup greens and discard the greens. Peel and wash the potatoes and cut them into small cubes. Add to the broth mixture and boil for another 15 minutes. In a small skillet, melt the butter and sautee the second onion and ham until the onions are translucent. Sprinkle the onions with the flour and add a bit of broth to mix it in. Add this mixture to the soup and let simmer for another 5 minutes. Garnish with parsley and enjoy!
