Curried Beef Stew

Ingredients
14 oz trimmed steak chopped into cubes (or chicken if you prefer)1 cup chopped carrots1 cup fresh spinach4 small potatoes1 large cooking onion chopped4-5 cloves of garlic chopped1 inch of garlic root peeled and diced1 540 ml can of chick peas, drained1 cup low fat chicken stock 2 tbsp curry powder
Directions
add onions, garlic and ginger in a low pot and "sweat" on low heat for 5-7 minutes, until onions are slightly translucent.
Add all other ingredients and allow to simmer for 50-60 minutes.
serve over brown rice if desired.
