Jessi's Guacamole Regional

Ingredients
1 Avocado1 Roma Tomato1/2 Onion1/2 Cucumber1/2 cup Fresh CilantroAbout 1 jalapeno pepper from can (Like the kind for nachos)Juice from 1-2 Limes1 Tbsp Vinegar from Canned JalapenosSalt to taste
Directions
1. Dice all ingredients into small pieces 1/2" and place in medium bowl. Don't forget those canned jalapenos, too. For the cilantro, cut off the ends of the stems and finely chop the leaves.

2. Half (or quarter, whichever makes it easiest to squeeze) lime and squeeze all the juice over veggies.

3. Drain 1 Tbsp of vinegar from the canned jalapenos and pour over veggies. Add salt to taste.

4. Lightly stir mixture and serve.

Yields about 6 1/2 cup servings.
