2lbs ground turkey1c chopped onion1 green bell pepper chopped1 can white corn1can diced fire roasted tomatoes1 small can sliced olives1pk taco seasoning mix1 10oz can enchilada sauce8 corn tortillas2c mexican blend cheese
Brown turkey onion and pepper. Drain. Add corn, tomatoes, seasoning, olives, sauce. Mix well. In a 9in pie plate spray with non stick spray. Add a thin layer of meat mix to the bottom and the add 3 tortilla, the meat mix, and top with cheese. Continue until pie plate is full ending with the cheese. Cook at 350 for 30 mins. serve with low fat sour cream and diced green onions
