MK Quick Chickpea Salad

Ingredients
1 can chickpeas, drained and rinsed in cold water1 cucumber, diced1/2 red pepper, seeded and diced1 garlic clove, minced1 lemon, juiced (or wine vinegar)1 tbsp olive oil1/2 tsp cumin powder Salt & Pepper to taste
Directions
1 half-cup serving about 100g. Makes 4 servings.
In a small bowl, stir oil, lemon juice and cumin. Add chickpeas, cucumber and red pepper. Season to taste with salt and pepper. I sometimes add a splash of tabasco for kick. Marinate in fridge for 30 mins. Even better the next day.
