Pumpkin Fudge

Ingredients
2 Tbsp. of butter or margarine2 1/2 cups of sugar2/3 cup of evaporated milk1 cup white chocolate morsels7 oz. jar marshmallow creme3/4 cup canned pumpkin1 tsp. Watkins Pumpkin Pie spice1 tsp. Watkins double strength Vanilla extract
Directions
Line a 9 x 9 inch pan with foil. In a 3 quart saucepan, heat milk and sugar over medium heat. Bring to a boil, stirring occasionally. Mix in pumpkin puree and spice; bring back to a boil. Stir in marshmallow creme and butter. bring to a rolling boil. Cook for 18 minutes, stirring occasionally. Remove from heat, add chocolate and vanilla extract. Stir until creamy and all chips are melted. Pour into prepared pan. Cool, remove from pan and cut into 1 inch squares.

Makes approximately 64 pieces.

    My only changes are: 1) to add the whole bag of white chips instead of just 1 cup and 2) use fat free evaporated milk. It works just as well! Yummy fudge recipe! - 10/26/10
