Crock pot Cabbage Soup

Ingredients
2 Tbs Extra Virgin Olive Oil1# Lean Ground Beef1 lg(1C) Onion, chopped1 lg (1C) Green Pepper, chopped1 clove Garlic1/2 small head(4C)) Cabbage, chopped1-(141/2 oz) can Beef Broth1-(28oz) can DeiFratelli Petite Diced Tomatoes, incl juice1-(10oz) can Ro-Tel Diced Tomatoes & Green Chilies, incl juice1-(48oz)can Tomato Juice Salt and Pepper to taste Fresh or dried parsley to taste
Directions
Makes 5 quarts or about 20 (8 oz) servings

Heat Olive oil in large skillet or pot. Add ground beef and while browning, add onion, green pepper, garlic, and cabbage. Stir occasionally until meat is browned and onion, green pepper, garlic and cabbage are soft and/or caramelized.

Transfer ingredients to crock pot. Add beef broth,
diced tomatoes, diced tomatoes with chilies, tomato juice, salt, pepper and parsley. Cook on high for 3-4 hours.
