chickpea stuffed zuchinni

1 Tbsp olive oil5 med. zuchinni8 oz fresh mushrooms1 med. onion, chopped15 oz canned chickpeas2 cloves garlic,minced1.5 Tbsp cuminsalt and pepper to taste
Heat oil in large skillet. Scoop out flesh from the zuchinni and place in skillet with remaining veggies for 3-5 min. Add chickpeas and spices and cook until soft. Stuff the zuchinni boats and bake at 350 degrees for 20 min.
Optional variation: Sprinkle with cheese before baking.
