3 egg whites2 tbsp non fat milkdash pepperdash salt1 small roma tomato diced 1 mexican green onion diced1/5 avocado, peeled and sliced1 clove garlic1/4 cup fat free yogurt1/4 cup chopped fresh cilantro1.5 tsp olive oil
chop tomato finely with a sharp knife, divide into 2, use the mushy, seedy part for sauteing and the clean diced tomato for garnishing
chop green onions, use white part for sauteing and green for garnishing
slice avocado, mince garlic and chop cilantro leaves finely
beat egg whites with milk, salt and pepper.
heat olive oil, saute green onions, tomato and garlic for 3-4 min
add eggs, let them set, flip if necessary
take out on a plate, garnish with tomato, green onions, cilantro, avocado slices and a dollop of thick yogurt
