Chicken & Tomato Balti

Ingredients

4 tbsp oil6 curry leaves1/2 tsp mixed onion & mustard seeds8 medium tomatoes sliced1 tsp ground corriander1 tsp chili powder1 tsp salt1 tsp ground cumin1 tsp garlic pulp675g skinned chicken, cubed150ml/ 2/3 cups water1 tbsp sesame seeds roasted1 tbsp chopped fresh coriander/cilantro
Heat the oil and add curry leaves and mixed onion and mustard seeds
Lower heat and add tomatoes
Mix in a dish, ground coriander, chili powder, salt, ground cumin and garlic
Add mixed spices to the tomatoes and stir
Add chicken and mix together
Stir fry for approx 5 minutes
Add water and continue cooking and stiring until chicken is cooked
Add sesame seeds and fresh corriander and serve
I like to add a couple of chopped fresh chilies once cooked just for a little extra kick
