Sweet Potato Hash

2 large shallots, diced1lb sweet potatos1/2 package (~6oz) spinach, chopped1 tbsp olive oil1 tsp paparika1/2 tsp chili powder1/2 tsp coriander powdercoarse salt & pepper to tasteHot sauce (optional)
1. Either use a hand grater or a food processor fitted with the coarse grating disk and grate the sweet potatos
2. Toss sweet potatos with spices
3. Heat the tablespoon of oil in a large nonstick skillet over medium-high heat. Add the shallots and cook, stirring occasionally, until beginning to brown, 2 to 3 minutes.
4. Add the sweet potatoes and cook, tossing occasionally, until tender, 7 to 9 minutes more.
5. Add the spinach and cook, tossing, until just wilted, 1 to 2 minutes more.
6. Serve with hot sauce (optional)
