Glorious One Pot Meals-Argentinian Turkey

Ingredients
Olive Oil Spray1/2 medium onion minced1/2 red bell pepper minced8-10 mushrooms sliced1/2 t ground cuminsea salt & ground pepper to taste10 oz. lean (93%) ground turkey1 cup parboiled brown rice1 cup plus 1T low sodium broth2 cups cubed butternut squash2 cups broccoli florets
Directions
This is a recipe from the "Glorious One Pot Meals" cookbook. It works great with Le Creuset Enameled Cast Iron dutch ovens

Makes 4 servings (about 2 cups each)

- Heat oven to 450 degrees
- Spray 2 qt. dutch oven with olive oil spray
- Mix onion,peppers,mushrooms & spices and meat and mix well
- Rinse rice and tip into pot; cover with broth
- Drop forkfuls of meat mixture on top of rice
- Layer squash on top of meat
- Layer broccoli on top of squash
Cover & bake for 45 minutes
