Szechuan Chicken

Ingredients
Directions
Marinade:1 c. water2/3 c. soy sauce2 T. rice vinegar1-1/2 tsp honey1 t. red crushed red pepper flakes3 t. crushed garlicStir-Fry:3 boneless, skinless, chicken breast, cut in strips1-1/2 c. chopped onions1-1/2 c. fresh brocolli1 c. baby carrots, quartered3/4 c. green pepper, cut in strips3/4 c. red pepper, cut in strips1/2 c. water2 T. flour
In 2 cup glass measuring cup, combine all marinade ingredients.
Marinate chicken strips in 1/2 of the marinade overnight. Store remaining marinade until ready to cook.
Spray skillet with non-stick spray; heat over medium-high heat until hot. Add drained chicken strips and cook until browned, approximately 8 minutes. Remove from skillet and set aside.
In same skillet, saute onions, peppers, carrots for 5 minutes. Add broccoli, chicken and remaining marinade to pan and continue to saute until chicken is done. Mix a thin flour/water slurry into the mixture to thicken as desired.
Serve over whole wheat linguine. (Not included in nutritional content.)
