Crustless Bacon & Veggie Quiche

Ingredients
1/2 tbsp butter1.5 tsp garlic, minced1 tsp salt1/2 tsp pepper1/4 cup bacon bits6 eggs1.5 cup milk, nonfat1.5 cup cheddar cheese, shredded3/4 cup spinach, shredded3/4 cup broccoli, chopped3/4 cup tomato, chopped1/4 cup onion, chopped1/2 cup mushroom, chopped1/4 cup whole wheat flour1/4 cup white flour1/2 tsp baking sodaCooking Spray
Directions
Melt butter. Sautee minced garlic and onion in frying pan until translucent. Mix in veggetables until slightly cooked.

In mixing bowl, combine eggs and milk. Add seasonings, bacon bits, and cheese. Gradually add flour and baking soda until well mixed.

Combine vegetable mixture into egg mixture and mix well. Spray pie pan with cooking spray. Pour mixture into pan. Cook at 350 degrees for 20-25 minutes, or until brown on top. Enjoy!
