Sweet and Sour Chicken

Ingredients
6 C. cubed chicken (32 Oz)bag baby carrots1 green pepper1 red or yellow pepper1 C. celery strips1 medium onion1 can dole pineapple tidbits (1 1/2 C)3/4 C pineapple juice1/4 C packed brown sugar.25 tsp ginger.5 tsp salt.25 tsp garlic2 T cornstarch1/4 C water4 C instant brown Rice, cooked according to directions (8 C cooked)
Directions
place chicken, vegies equal to 6 C and 1 can pineapple tidbits, juice reserved in crockpot. Mix spices and sugar in juice and add. Cook on low 6-8 hours. Mix 2 T cornstarch in 1/4 C water and add at end. Serve over brown rice.

This mix could also have chicken bouillon granules in it and perhaps less garlic and ginger.

each serving is about 2 C of the sweet and sour and 1/2 C of rice.
