Couscous Salad

Ingredients
# Couscous, 1 cup, dry, yields (remove)# Chicken Broth, 14 fl oz (remove)# Morningstar Farms Chicken Strips meal starter, 1 serving, 12 average pieces, 2.5 serving (remove)# Carrots, raw, 1 cup, grated (remove)# Raisins, .5 cup, packed (remove)# Pistachio Nuts, 1 oz (47 kernels) (remove
Directions
Combine broth, carrots, raisins, and pistachios in a pot and bring to a simmer. Let simmer for 5 minutes and remove from heat. Stir in uncooked cousous and let it sit covered for 5 minutes. Meanwhile saute chicken strips according to package directions. Cut into bite sized pieces and add to the cooked cousous. Serve over 1 cup of fresh spinach with a vinegrette dressing.
