Calamari with Lemon Aioli & Pea Salad

Ingredients
Finely grated zest & juice of 1 lemon400g squid tubes, sliced into 1cm rings2 Tbl whole egg mayonnaise1 small garlic clove, crushed2 cornichons, chopped1 Tbl red wine vinegar1 Tbl olive oil1 cup frozen peas, blanched & refreshed1 Lebanese cucumber, chopped1 cup cherry tomatoes, halved1 bunch mint leaves
Directions
Mix the mayonnaise, garlic, chopped cornichons, lemon juice and half the zest in a bowl. Set aside.

Shake together red wine vinegar and olive oil. Season with salt and pepper. Toss the peas, cucumber, cherry tomatoes and mint together with the dressing.

Wok fry (with oil spray) the squid rings with the rest of the lemon zest. Serve immediately.
