Balti Chicken with Vegetables

Ingredients
4 tbsp corn oil2 medium onions, sliced4 garlic cloves, thickly sliced1 lb skinless chicken breast fillets, cut into strips1 tsp salt2 tbsp lime juice (about one lime)3 fresh green chillies, chopped 2 medium carrots, cut into batons2 medium potatoes, peeled and cut into 1/2 inch strips1 medium zucchini, cut into batons4 lime sliceschopped fresh cilantro (optional)fresh green chillies, cut into strips (optional)
Directions
1) Heat the oil in a large karahi, wok, or deep pan. Lower the heat slightly and add the onions. Fry until the onions are lightly browned.
2) Add half the garlic slices and fry for a few seconds before adding the chicken and salt. Cook everything together, stirring, until all the moisture has evaporated and the chicken is lightly browned.
3) Add the lime juice, green chillies, and all the vegetables to the pan. Increase the heat and add the rest of the garlic. Stir-fry for 7-10 minutes, or until the chicken is cooked through and the vegetables are just tender.
4) Transfer to a serving dish and garnish with the lime slices, fresh cilantro and green chilli strips, if desired. Serve immediately.
