Creole in a Bowl

Ingredients
1 Tbls Oilve oilGreen Bell Pepper- diced(1.5 cups or 1 pepper)Onion- peeped and diced(1.5-2 cups or one med onion)1 Package(20oz) Hot sausage( I use Jenny-O Turkey sausage)1 ten oz can MILD rotel tomato- (unless you like is SPICEY!)- undrained1 14.5oz can diced tomatos(I use hunt's fireroasted with garlic flavor)- ungrainedOne 15oz reduced sodium black beans-drained & rinsed wellOne 11oz can mexicorn5 cups water2 cups rinsed long grain rice( I like basmati)2 Tbls lemon juice16oz cooked salad shrimp- thawed2 Tbls fresh cilantro- well chopped
Directions
** hint: to make sausage easy to chop- microwave until almost cooked and allow to cool- then you can peel the casing off and chop.

In a LARGE pot( I use the bottom of a double boiler) add 1 Tbls olive oil, the green pepper, onion, and sausage- diced. Cook over med hi- stirring occasionally until sausage is well done and onion translucent( appx 10 min)
Add the undrained rotel and diced tomatos, the rinsed black beans, the undrained corn, water, rinsed rice and lime juice- stir well and bring to a roiling boil. Cook 2 or 3 min at a boil stirring. ( Add a bit of chicken bullion if you like just make sure it's a low sodium version!) LOwer heat to simmer and cook covered until rice is done and water is absorbed( about 45 minutes)

Add shrimp and stir to mix- cover and allow to stand 5 minutes.

sprinkle with fresh cilantro- allow guests to spoon into bowls....makes 15 generous one cup servings
