Low-fat Oatmeal Raisin Cookies

6 tbsp margarine (healthy)1/2 cup honey1 egg1 tsp vanilla extract6 tbsp milk1 1/2 cups whole wheat flour3/4 tsp baking soda1/2 tsp baking powder1/2 tsp cinnamon1/4 tsp salt1/4 tsp nutmeg1 1/2 cups quick-cooking oats3/4 cup raisins
Preheat oven to 375 F.
Beat butter and honey until smooth, add egg, vanilla, and milk and beat well. Mix flour, soda, powder, cinnamon, salt, and nutmeg, gradually add to wet mixture. Stir in oats and raisins. Drop by tablespoon fulls onto cookie sheets coated with cooking spray. Bake for 9 minutes, until golden. Makes 3 dozen.
