Fried Chicken Strips w/ Crusty Almond Breading

- 1 cup bread WW bread crumbs (About 3 slices whole wheat bread-i used 90 cal slices)-1/2 cup finely chopped or ground almonds (i used leftover from making almond milk! nifty!)-1/4 cups shredded parmesan cheese- 2 tbsp dried parsley- 2 tsp garlic- 1 tsp salt- 1/4 tsp dried thyme- pinch black pepper- 1/4 cup extra virgin olive oil- 2 1/2 chicken breast, skinless, bones removed
-Place oil in shallow dish for dipping
- mix first 8 ingredients to make bread crumb mixture
-Pound chicken to 1/2 inch thickness, slice into 12 strips
- dip each slice in oil and dredge in breading mix and place in a baking pan
-bake for 15 minutes
-Serve, Enjoy!
