Spinach Mushroom Omelette

1 cup spinach, fresh1/2 cup chopped mushrooms1 egg2 tbsp egg white15 grams light Monterey Jack cheese
Makes 1 serving
In non-stick frypan, allow spinach and mushroom to saute 5 min. until spinach is wilted. If it seems dry, add a smidgen of water (skip adding oil).
Beat 1 egg togetherwith the egg white and pour over veggies. Allow egg to cook. Add the cheese and let it melt.
Yummy breakfast!
