Scrambled Veggies

Ingredients
Chop:1/2 c green bell pepper1/2 c red bell pepper1 small zuccini1 small summer squash1 plum tomato1 medium tomatillo1 small onion1 pat butter1 slice of lean ham - diced2 eggs1 oz shredded cheddar cheese
Directions
With one pat of butter in a non-stick fry pan, stir-fry all chopped veggies and the ham. When veggies are about half done, add 2 eggs to the pan. Continue to stir-fry. Remove from heat and put into a small casserole dish. Sprinkle with shredded cheese, then put in the microwave just long enough to melt the cheese.
