Mushroom & Parsley Mini Pizza

Ingredients
-4 pieces 100% Whole Wheat Sandwich Thins rolls-12 grape tomatoes-1/4 cup ricotta cheese part skim-4 medium mushrooms-1/4 cup fresh parsley-salt and pepper to taste
Directions
Preheat oven to 350°F. Toast Sandwich ThinsŪ halves to light golden.

In a skillet, heat 1 tablespoon of the oil, mushrooms and cherry tomatoes halved. Cook until soft and moisture is released, about 5 to 7 minutes; and season with salt and pepper to taste..

Spread approximately 1 tablespoons ricotta on top of each toasted Sandwich ThinsŪ rolls half. Top each pizza with a few parsley leaves and divide mushrooms and tomatoes between each pizza.

Place pizzas on a baking sheet and bake for 3 to 5 minutes to heat and infuse all the flavors.
