1 tbsp olive oil2 medium onions, chopped1 tbsp minced garlic16 oz raw, sliced mushrooms18 oz Bistro Sensation Habanero w/ Monterey Jack Cheese Chicken Sausage, sliced into bite-sized chunks10 oz fresh spinach1.5 cups uncooked arborio rice4 cups chicken broth1 cup water6 wedges Laughing Cow light creamy swiss cheese
Saute onions, garlic, mushrooms, spinach and chicken sausage until onions and mushrooms are soft. Add rice and continue cooking on high for 1-2 minutes while stirring. Add chicken broth and water one cup at a time, stirring constantly over medium to medium-high heat, until all liquid is absorbed. Mix in laughing cow cheese. Makes 11 1-cup servings.
