Blueberry Oatmeal Muffins

Ingredients
1 c. silk1 tsp. vinegar1 c. oatmeal1 egg1/2 c. oil1/2 c. brown sugar1/2 tsp baking soda1/2 tsp salt1 tsp baking powder1 c. flour1 1/2 c fresh blueberries
Directions
mix silk and vinegar, add oats and let sit for 1 hour.

add egg and oil to oatmeal. mix together dry ingredients and fold in blueberries.
spoon into prepared tin - bake at 400 for 15-18 minutes.

makes 12 muffins.
