Frittata muffin cups

Ingredients
2 cups eggbeaters2 tbsp. water1/2 cup chopped broccoli 1/4 cup chopped onion1/4 cup chopped peppers1 cup shredded 2% cheddar cheese(DIVIDED)2 tbsp. fresh basil choppedsalt and pepper
Directions
Preheat oven to 350
Spray muffin pan with cooking spray(spray well)
in a medium bowl mix egg and water
add 1/2 cup of the cheese,veggies,basil,salt and pepper
divide mixture evenly into 12 muffin cups
bake 20 min.
sprinkle the tops with remaining cheese and bake an additional 5 min. makes 6 servings.2 mini frittatas each.

    Excellent. You can put almost anything in them. I used cubes of ham, cheese, red pepper and onions because that's what I had available. Great for kids to eat on the go if necessary- it holds together well, so kids can eat with their hands. - 1/9/08

    Great recipe! You can put almost anything in them. I do some with just ham and cheese for the kids, and load up on veggies for mine. Wrap and refridgerate the leftovers for a grab and go breakfast! - 1/10/11
