1cup Whole Wheat Flour1cup all purpose flour1.5 tsp baking powder0.5 tsp baking soda1 tsp ground cinnamon1 tsp ground nutmeg0.25 tsp salt2 beaten eggs1.5 cups mashed banana1 cup sugar0.5 cup unsweetened applesauce
Makes 52-55 mini muffins.
Preheat oven to 350F.
Combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
In medium bowl, combine eggs, bananas, sugar, and applesauce. Add egg mixture all at once to flour mixture. Stir just until moistened.
Grease mini muffin tins with pam spray, spoon batter into muffin tins.
Bake 10 minutes at 350F.
