250g Porriage oats70g Light muscavado sugar4tbsp Golden syrup/Pancake syrup140g Light margarine85g Rasins25g Dried cranberrys25g Dried apricotsand a hand full of any crushed unsalted seeds and nuts.i find sunflower, pumpkin, sesame seeds along with flaked almonds work very well with this recipe.the more you add the crunchier and tastier your flapjack will be!!
preheat the oven to 160c/fan 140c/gas3
gently heat the sugar,syrup and margarine in a large pan until melted.
stir in rasins, apricots, cranberrys, seeds and nuts. once covered in the mixture add the oats a little at a time and mix well so all the oats are covered with the syrup mixture.
line a 9" baking tin with baking parchment, and spoon in the mixture.
press down on the mixture with the back of a spoon, making sure it is evenly spread out.
bake for 30-40 mins until golden brown
makes 16 flapjacks
