Curried Rice Salad with Mango

Ingredients
*White Rice, medium grain, 1 cup (or brown)Mangos, 1 fruit without refuse (remove)*green onion (spring onion), 0.25 cup (remove)Pumpkin Seeds, .25 cup (remove)*Trader Joe's Organic Dry Roasted Cashews, 0.25 cup (remove)Cilantro, raw, 1 tbsp (remove)Limes, .25 fruit (2" dia) (remove)Dressing:*A Taste of Thai Red Curry Paste, 1 tsp or any mild curry paste.Limes, 1 fruit (2" dia) (remove)*Lime Peel, 1.5 tsp (remove)Sunflower Oil, 3 tbsp (remove)Cilantro, raw, 1 tbsp (remove)
Directions
1. Bring water to boil and add the rice. simmer 25 minutes or until tender. Drain and ringse under cold water to cool and drain again.
2. While rice is cooking, cut mango and cut into cubes.
3. Chop the green onions, add them to the bowl with the pumpkin seeds and cashews
4. Make the dressing with the curry paste, lime peeol and juice, whisk in the oil, chopped cilantro, salt and pepper (to taste)
5 Add drained rice into the mango mist, pur dressing over the salad and toss. Serve with fresh cilantro and lime wedges.
