Soyrizo Goulash

Ingredients
One package Soyrizo3 Yukon Gold potatoes, diced2 Tbsp Taco Sauce1 Cup cooked rice1/4 cup corn1/4 spinach (the last three ingredients were leftovers from a previous meal - make 1/2 cup rice and add corn and spinach)1 Can red beans, well rinsed (actual sodium is much lower)1 Can Swanson Chicken Broth (with 40% less sodium and no MSG)1 Cup shredded cheese
Directions
Cook potatoes partially in the chicken broth, until the broth is almost gone. Add soyrizo and sautee a bit longer, adding water if it gets too thick. Then add all the rest of the ingredients and mix well. Bake in a 400 degree oven for at least 30 minutes, or until the potatoes are done.
