3 Bean Chorizo Soup

1 12 inch link chorizo1 onion, chopped2 carrots, chopped~5 medium potatoes, chopped2 stalks celery, chopped1 can red kidney beans, drained1 can black beans, drained1 can cannelini beans, drained1 can crushed tomatoes (i used the ones with mild chiles included)1 quart chicken broth, plus 1 can (if more liquid is needed)1T cumin1T Italian seasoning2 Bay leaves
Brown chorizo in the bottom of a large pot with the chopped onion.
When chorizo is cooked, add chicken broth, carrots, celery, beans, tomatoes & seasonings and bring to a boil.
Add potatoes and lower heat to simmer, leave covered on simmer for 30 minutes to an hour, until celery, carrots and potatoes are soft.
Makes 16-20 one cup servings. Yum!
