* Potato, raw, 2 large, Halved * Flour, white, 2 cup * Egg, fresh, 1 large
Bring a large pot of salted water to a boil. Place peeled, halved potatoes into the pot. Cook until they are tender but still firm. Drain, coll and mash.
Combine 1 cup of mashed potato, flour and egg in a large bowl. Knead until dough forms into a ball. Shape small portions of the dough into long snakes. On a floured surface, cut snakes into half-inch pieces.
Bring a large pot of lightly salted water to a boil. Drop in gnocchi and cook for 3 to 5 minutes or until all the gnocchi have risen to the top. Drain and serve.
Not included is the sauce. I serve mine with a nice tomato-based sauce, but it is paired well with almost anything.
Makes 4 Servings.
