4 stalks celery chopped2 med onino chopped2 cup broccoli2 cup cauliflower2 cup asparagus1 tsp coarse salt1 tsp curry powder1 tsp herbamere seasoning2 bay leaves20 gm feta cheese per serving1 tblsp toasted almonds per serving1 tblsp chopped scallions(green onions) per servingsprinkle cayene
saute onion and celery in small amt chicken stock I use homemade no salt. when soft add all liquid vegetables and spices. Simmer on medium for 1 hour. Remove bay leaves and puree. Heat spoon into bowls top with crumbled feta, almonds scallions and cayenne pepper. Soup has 66 cal per serving and 106 for cheese and almonds. 172 total
