Chicken Picante - Frozen Chicken Breasts

4 boneless skinless chicken breasts (abt 4 oz. each) (Foster Farms Frozen Boneless Skinless Chicken Breasts with Kosher Salt used in Nutritional Information)1 cup medium chunky salsa1/4 cup dijon mustard2 Tbsp fresh lime juice1/4 c fat free sour cream1 lime sliced into 4 segmentsChopped cilantro, for garnishing
Serves 4
1. Preheat oven to 375 F. Line a baking dish with foil.
2. In a bowl mix salsa, mustard and lime juice
3. Place frozen chicken breasts in baking dish. Top with salsa mixture. Cover with foil and bake for 40 minutes.
4. Remove top foil and continue cooking until center of the largest piece of chicken reaches 170 F (about 10-15 minutes)
5. Remove chicken to serving platter.
6. Place 1 Tbsp of sour cream on each breast half and top each with a lime segment. Garnish with chopped cilantro
