* Jessy's low calorie applesauce (sweetened w/splenda), 4 tbsp * Wholemeal flour, 2 cup * Milk, nonfat, 0.5 cup * Egg, fresh, 1 large * Peanuts, dry-roasted, 0.25 cup, chopped finely * Raisins, 0.5 cup (not packed), chopped finely * Banana, fresh, 1 cup, mashed (3 small ones) * Baking Powder, 1 tsp * Baking Soda, 1 tsp * Cinnamon, ground, 2 tbsp * Vanilla Extract, 2 tsp * Salt, 0.5 tsp * Splenda for Baking, zero calorie, 1 cup
in a processor mix bananas + peanuts + raisins + 1 tbsp cinnamon + egg + vanilla extract + applesauce + milk. In another bowl mix flour + splenda + baking powder & soda + 1 tbsp cinnamon+ salt. Combine wet with dry, mix till incorporated. Make sure to spray your baking pan with a cooking spray or oil (i used parchment paper as well - i lined the paper then sprayed it). Bake at 350 F (or 180 C) for 50 min or till toothpick inserted is clean. makes 20 thin slices. A serving = 1 slice. This is great with a sliver of butter or a dollop of applesauce with a cup of tea/coffee. Enjoy! :)
