Tuscan Chicken

Ingredients
8 chicken thighs1 large onion2 red peppers seeded and sliced1 garlic clove300ml passata2/3 cup dry white winelarge sprig oregano2 cans cannellini beans3 tbsn fresh breadcrumbssalt and black pepper
Directions
fry the chicken in a no nstick pan until golden brown. Remove and keep hot. Add the onions and peppers to the pan with a spray of olive oil and gently cook until softened but not brown. Stir in the garlic. Add the chicken, passata, wine and oregano and season well. Bring to the boil and cover pan tighly.

Lower the heat and simmer gently stirring occasionally for 30-35 minutes or until chicken is tender and the juices run clear.

Stir in the cannellini beans and simmer for further 5 mins. Sprinkle with the bread crubms and cook under a hot grill until golden brown.
