Chili Rellenos Pie

Ingredients
2-4 oz cans of chopped green chilis1-8 oz pkg. of reduced fat mexican style cheese blend2 T flour8 oz evaporated milk2 eggs10 oz. enchilada sauce or tomato sauce
Directions
Spread one can of the chilis into the bottom of an 6 x 10 pan or small casserole dish. Layer the cheese on top. Put second can of chilis over the cheeses. Put 2T flour into a large bowl, whisk in a small amount of the evaporated milk to form a smooth paste. Whisk in the rest of the milk and the eggs. Pour over the chili mix; bake at 350 for 30-45 mins. Pour enchilada sauce over the top of the baked casserole and cook for an additional 15 minutes. Let set for a few minutes before serving. Makes 6 servings.
