Mahi Mahi Packets

Ingredients
1 red pepper1 green pepper1 cup edamame3 carrots, julienned1/4 cup lemon juice1 Tbsp parsley1 tsp thyme16 ounces mahi mahi1/2 cup mushrooms (optional)
Directions
Spray large piece foil with cooking spray. Place fish in center of sheet. Top with chopped vegetables. Sprinkle with spices and lemon juice. Seal each into a packet. Bake at 450 degrees for 10+ minutes until 140 degrees.

Serve with orzo (not in calculation)

1 fish and approximately 1 cup cooked vegetables.
