Vegetarian black bean chili

1 cup dried black beans4 cups water1/4 tsp cumin1/8 tsp cayenne pepper1/2 tsp paprika1/2 sweet onion, diced or chopped1 - 3 cloves garlic, minced1/2 tsp mustard powder1 tsp chili powder3 vine ripened tomatoes, sliced2 Tbsp tomato paste1 red bell pepper, chopped1/4 - 1 tsp salt (depending on taste)shredded cheese (not included in nutrition info)rice
Soak beans in water overnight. Drain and discard water; rinse beans. Place beans and 4 cups water in the slow cooker and cook on high for 6 hours, or until tender. Sautee onion, garlic, and spices until fragrant, then add to slow cooker. Add tomato, pepper, salt, and tomato paste. Set cooker on low and cook for an additional 3 to 4 hours. Serve over rice or corn bread/muffins with a few ounces of sharp cheddar cheese.
