8 oz green beans, julienned10 cups (1kg) cabbage, shredded (red cabbage)2 pears, firm, cored & thinly sliced1/2 cup chopped pecans4 green onionsCARAWAY & CELERY SEED DRESSING2 tbsp lemon juice2 tbsp cider vinegar1 tbsp Dijon mustard1/2 tsp caraway seeds1/2 tsp celery seeds, crushed1/2 tsp salt1/2 tsp sugar1/4 tsp pepper1/4 cup olive oil
makes 8-10 servings
CARAWAY & CELERY SEED DRESSING
In a small bowl, whisk together lemon juice, vinegar, mustard, caraway seeds, celery seeds, salt, sugar, and pepper.
Gradually whisk in oil until thickened.
cover & set aside (up to 8 hours) whisk before using.
Steam green beans for 60 seconds then chill under cold running water. drain and blot dry with paper towels. Can be refrigerated for up to 8 hours.
In a large bowl add cabbage, beans, pears, pecans & onions.
Add dressing and toss to coat.
